PROCESSING METHODS

Processing shapes every coffee, sometimes by necessity — like dry processing in regions where water is scarce — and sometimes by design, like anaerobic or carbonic maceration. From traditional methods rooted in place to innovative techniques that push the boundaries, we stay open to it all. This approach keeps our menu diverse and helps us discover how different species and processes bring out each coffee’s best expression.

COFFEE FRESHNESS

Freshness isn’t just about the roast date — it’s about packaging. Our bags are folded to minimize CO₂ and designed with a degassing valve to allow CO₂ to escape, preserving the coffee’s full flavor and aroma far beyond the roast. From the first cup to the last, you’ll taste the clarity and balance our roasters intended.
