We embodied the detail, care, and commitment to quality of the kissaten artisans — with their careful sourcing, in-house roasting, and slow, methodical filtering.

This coffee transcends contemporary dark roasts in flavor and complexity and lives in a category of its own — a kissaten blend.

Blend Inspiration

While dark roasts are often considered to be made of lower-quality beans roasted excessively to mask unwanted flavors, we know dark doesn’t have to mean dull. We recalled the roasts found in the original kissatens of Japan — deep yet distinct flavors full of nuance.

Roast Story

To achieve a dark roast that upholds this level of integrity, we punctuated organic Latin American coffee with a washed Ethiopian component for a blend with complex layers, a smooth and heavy body, and a beautiful sweet and smoky flavor.

Brew Tips

We very intentionally crafted this specialty dark roast by considering the blend composition, roast levels, and extraction. By lowering the brew temperature from 205° to 180° and adjusting the ratio to 1:10, we eliminate any harsh bitterness and astringency for a smooth, balanced cup. How to Brew Tokyo Kissa

1.  Heat Your Water
Heat at least 250 g water to 180ºF to extract the best body without the bitterness. Darker roasts brew best at the cooler side of the spectrum. 2.  Grind Your Coffee
Grind 25g of Tokyo Kissa coffee to a medium grind. 3.  Bloom the Grounds
Add your coffee to your Blue Bottle Dripper with the filter. Shake gently until level.
Start your timer and scale at zero. Beginning in the center of the grounds, pour a spiral pattern: three laps out then three laps in, until you reach 50 g on the scale.
You’re aiming to finish this pour in 10 seconds. 4.  Begin Your First Pour
At 40 seconds, beginning in the center of the grounds, pour a spiral pattern: five laps out then five laps in, until you reach 150 g on the scale.
You’re aiming to finish this pour in 10 seconds. 5.  Begin Your Pour
Repeat this pour one more time beginning in the center of the grounds, pour a spiral pattern: five laps out then five laps in, until you reach 250 g on the scale.
You’re aiming to finish this pour in 10 seconds. 6.  Wait for the Finished Cup
Allow all the water to pass through the dripper into the carafe. Total brew time — depending on coffee, roast level, and grind — can take anywhere from 2:30 to 3:30 minutes. 7.  Enjoy
Pour the coffee into your favorite mug and enjoy. Enjoy your kissaten roast, brewed strong for the ideal body and flavor.
