A Closer Look

Giant Steps is a rich organic coffee with indulgent flavors that demand reverie. We made this coffee to be enjoyed tucked beneath a cozy blanket on a foggy day — and every day that follows. Roasted dark to bring out its deep chocolate notes, this full-bodied coffee holds its own with milk or cream.

Giant Steps

Originally crafted to diversify our coffee menu and satisfy those seeking a bold, milk-friendly option, this dark roast captivates with its straightforward, compelling flavor.

Named for John Coltrane’s groundbreaking album Giant Steps, this coffee’s roast profile is not unlike his visionary jazz, with smooth, chocolatey bass notes and sweet, divergent riffs.

Giant Steps is the coffee you turn to for something familiar, yet layered with nuance — its deep sweetness and steady character make it a daily ritual for those who savor warmth and consistency.

Giant Steps is available in Blue Bottle cafes around the world. Savor it black for a resonant cup, or as a café au lait to highlight its chocolatey notes. Explore our app and cafe membership program here.

Signature Blends Brew Guide

Heat at least 350 g water to 195–205ºF. Darker roasts brew best at the cooler side of the spectrum, while lighter roasts take hotter water.

Grind your coffee to a medium grind.

Add your coffee to the filter sitting inside your dripper. Shake gently until level.

Start your timer and scale at zero. Beginning in the center of the grounds, pour a spiral pattern: three laps out then three laps in, until you reach 50 g on the scale.

You’re aiming to finish this pour in 10 seconds.

At 40 seconds, beginning in the center of the grounds, pour a spiral pattern: five laps out then five laps in, until you reach 150 g on the scale.

Allow all the water to pass through the dripper into the carafe. Total brew time — depending on coffee, roast level, and grind — can take anywhere from 2:30 to 3:30 minutes.

Pour the coffee into your favorite mug and enjoy. If you brewed into a mug, give it a stir before drinking.

Barista Story

The Dial In

Crafting a perfect pour over is an art rooted in omotenashi, the Japanese concept of selfless and heartfelt hospitality. Each time a pour over is ordered, our baristas — from LA to Tokyo — begin their ritual, placing a fresh filter in the Blue Bottle Dripper, freshly grinding your coffee of choice, and pouring the same pattern at the same rate they’ve practiced hundreds of times. It’s a daily dance of precision and intuition, where every cup reflects devotion — to the craft and you.
